Refreshing Summer Salad

4 cups mixed salad greens (such as lettuce, spinach, arugula)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup fresh strawberries, sliced

1/2 cup fresh blueberries

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup sliced almonds (optional, for added crunch)

For the dressing:

3 tablespoons extra-virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste


Combine the mixed salad greens, cherry tomatoes, cucumber, strawberries, blueberries, red onion, and feta cheese in a large salad bowl. Toss gently to mix.

If using sliced almonds, toast them lightly in a dry skillet over medium heat until golden brown. Remove from heat and let them cool.

Whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper in a small bowl until well combined.

Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.

Sprinkle the toasted almonds (if using) over the salad for an added crunch.

Serve immediately and enjoy your refreshing summer salad!
