- 1/4 cup fresh parsley, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons mayonnaise (your choice of mayonnaise)
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
- Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
- In a large bowl, combine the sliced cucumbers, cherry tomatoes, red onion, dill, and parsley.
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, minced garlic, salt, and pepper until well combined.

- Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.
