Creamy Cucumber Pasta Salad

  • 8 ounces (225g) pasta (your choice of shape)
  • 2 medium cucumbers, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise (your choice of mayonnaise)
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste


  1. Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
  2. In a large bowl, combine the sliced cucumbers, cherry tomatoes, red onion, dill, and parsley.
  3. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, minced garlic, salt, and pepper until well combined.
  4. Add the cooked pasta to the bowl of vegetables, then pour the creamy dressing over the top.
  5. Toss everything together until the pasta and vegetables are evenly coated with the dressing.
  6. Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  8. Serve chilled as a refreshing pasta salad.
