Ingredients:
4 large bell peppers (any color)
1 pound ground beef
1 cup cooked rice
1 cup tomato sauce
1/2 cup diced onions
1/2 cup diced tomatoes
1/2 cup shredded cheese (cheddar or mozzarella)
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
Instructions:
Preheat your oven to 350°F (175°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Carve spooky faces into the bell peppers using a knife.
In a large skillet, brown the ground beef over medium heat. Add diced onions, and cook until they become translucent.
Add diced tomatoes, cooked rice, garlic powder, paprika, salt, and pepper to the skillet. Stir well to combine all the ingredients.
Pour in half of the tomato sauce and stir, allowing the mixture to heat through.
Stuff the spooky-faced bell peppers with the ground beef and rice mixture.
Place the stuffed bell peppers in a baking dish. Pour the remaining tomato sauce over the peppers.
Sprinkle shredded cheese on top of each stuffed bell pepper.
Cover the baking dish with aluminum foil.
Bake in the preheated oven for about 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Remove from the oven and let them cool for a few minutes.
